Mexican Street Corn Aug 11 Written By Allison Dhabalt “If you ever want me to do something around the house, just make me this.” -Ryan Ingredients2 Tbsp sugar1 lb. frozen corn (Or 4 ears fresh, corn OFF the cob)1/4 c. mayonnaise1/4 c. sour cream1/2 tsp sriracha or to tastekosher salt to tasteTajin, to taste1 c. cotija cheese (queso fresco), crumbled1/4 c. cilantro to tastechili powder to tasteDirections Bring 1 c. of water (enough to just cover corn) to a boil and add sugar. Once boiling, add corn and cover with lid. Simmer corn for 3-5 minutes or until corn is tender. Combine mayonnaise, sour cream, sriracha, kosher salt, and Tajin in a small bowl. Once corn is done, drain well and return to pan. Allow to cool for about 3 minutes. Add mayo mixture and stir until well combined. Add 1/3 c. or so cotija cheese to corn and mix.
