Melt-In-Your-Mouth Chicken
Summer tastes are extra special when we can cook supper with the windows open enjoying the country air. Mixed up a Cucumber Crack dip for our garden cukes that was a hit while lightening up this deeper flavored delish Melt-In-Your-Mouth Chicken. We always comment how good it is like it’s the first time. I’ll share the cuke dip recipe soon!
Ingredients
1 lb. Boneless Chicken Breasts
3/4 c. Mayonnaise
1/3 c. Grated Parmesan
1/2 tsp. Seasoning Salt
1/2 tsp. Black Pepper
1 tsp. Garlic Powder
1 1/2 tsp. Italian Seasoning
Optional: sprinkle breadcrumbs over chicken before baking
Directions
Preheat oven to 350° F
Mix together Mayo, parmesan and spices.
Using a meat tenderizer, pound chicken until desired thickness and add to pan.
Top chicken with mayo blend.
Bake for 20 minutes or until chicken reaches 165° F. Switch oven to broil and broil 3-5 minutes or until lightly browned.
Serve with your favorite veggies.
