Loaded Mac n’ Cheese

Cheese. Bacon. Pasta. Cheese…. And MORE cheese. This Loaded Mac n’ Cheese got a HUGE Make Again Approval from the family! My hubs, of course, dousing his in our homemade pepper shake to make it extra spicy! Whew!

PS… did I mention our quick this one is too?!?!

Ingredients

12 oz Rotini pasta, or pasta of choice

3 Tbsp Butter

3 Tbsp Flour

3 c. Milk

1 tsp fresh garlic, minced

1 tsp Salt

1/2 tsp Paprika

1/2 tsp Black Pepper

1/4 tsp Cayenne Pepper

4 oz Sharp Cheddar Cheese, shredded (reserve some for garnish)

4 oz Italian Cheese Blend, shredded

1/4 c. sour cream (reserve some for garnish)

1 lb Bacon, cooked and crumbled, reserve some for garnish

2 green onion, chopped for garnish

Directions

  1. Cook pasta according to directions, drain and set aside.

  2. In a saucepan over medium heat, melt butter. Add garlic and sauté until fragrant. Add flour and whisk to make roux. Add salt, paprika and pepper and mix well, cooking for 1 minute. Add milk and whisk constantly until combined. Continue cooking for about 1-2 minutes, or until mixture thickens slightly.

  3. Reduce heat to low. Add shredded cheese and stir until cheese is melted and fully incorporated. Remove from heat.

  4. Add sour cream and stir well. Add drained pasta and bacon (remember to reserve a small amount for garnish) and stir to combine. Heat on low if needed.

  5. Serve garnished with bacon, green onion, cheese and sour cream. And if you’re like my hubs…load up on the pepper shake!
