Oriental Salad


When it comes to salads, I always giggle at my husband. When we first married, he despised any ‘mom’ salads…..salads such as potato salad, cole slaw, etc. He also never cared for ‘rabbit food’…… until he tasted this Oriental Salad. Is there a more rabbit food type salad out there than this? He is OBSESSED with this and each time I make it, it’s like I’ve served him a million dollars on a gold platter.

INGREDIENTS

1 bag Cole Slaw mix

3-4 Green Onion, sliced/chopped

1/2 c Sunflower Seeds

1/2 c Almonds, toasted

1 Tbs Butter

3 Tbs White Vinegar

1/2 tsp Black pepper

1/2 c Canola oil

1 tsp Sugar

1/2 tsp Salt

1 pkg Ramen Noodle, Chicken flavor

DIRECTIONS

  1. Toast Almonds on stovetop with 1 Tbsp butter. Once nicely browned, transfer to paper towel to cool and absorb any excess butter.

  2. In a large bowl, combine cabbage, green onion, sunflower seeds and toasted almonds.

  3. In a small bowl, mix together, oil, vinegar, pepper, sugar, salt and seasoning packet from Ramen Noodles.

  4. Pour dressing mixture over cabbage mixture and toss.

  5. Refrigerate to cool.

  6. Crush Ramen Noodles and add to salad just before serving.
